At Amar Chocolate we love and celebrate the finest cacao Colombia has to offer. Our chocolate is 'tree-to-bar' meaning it's harvested, roasted and packaged by the farmers in Colombia. This model keeps more value at origin which is used to preserve the highest quality. By eating and enjoying our chocolate, together we are making a positive difference.
Our experience in coffee sourcing has naturally led us to this point. Speciality Coffee and high-quality cacao have so many parallels. As plants with very similar agronomic properties, cacao and coffee often grow harmonically alongside each other, requiring similar conditions to produce high quality fruit. Both exceptional products share the level of care taken in the field, the fermentation, the roasting and production stages, which leads to an elevated taste of experience. We have always been fascinated with all wonderful things Colombia has to offer, during our countless travels to origin over the past years and of our own experiences as Colombian, we have discovered so many things that makes us proud of the piece of land we come from. Every travel is a new discovery journey and the last one brought us to cacao.
Our first single origin chocolate bar comes from Finca Santa Maria in Huila, Colombia. Over the valley of the Magdalena river in the municipality of Hobo the cacao is harvested by Luis Fernando and his family. The farm has a great deal of shade, biodiversity, and rich volcanic soils. The varietal grown here is Criollo and Trinitario, fermented in wooden boxes for several days before drying. The combination of the excellent raw material and careful fermentation leads to a flavour intense cacao.
